Marks & Spencer is celebrating the 25th anniversary of M&S Luxury Gold Tea, made with fresh Fairtrade tea leaves from Kenya, Rwanda, and Assam. The leaves are vacuum sealed within 24 hours to maintain freshness and taste. The tea is expertly blended to the Gold Tea standard and can be paired with M&S biscuits, wafers, chocolates, or an old-school tea loaf with biscuit butter recipe.

In celebration of the 25th anniversary of their Fairtrade Gold Tea, they’ve created this delicious twist on a classic tea loaf recipe. Soaking the fruit in tea gives it a rich, fragrant flavor baked into the sticky loaf afterward. It’s also served with a digestive biscuit butter for added indulgence – the ultimate treat to serve alongside a cup of tea!

Ingredients

For the tea loaf

  • 300 ml freshly brewed M&S Fairtrade Luxury Gold Teabags
  • 200 g mixed fruits, cranberry and apricot are recommended
  • 75 g golden raisins
  • 75 g medjool dates, roughly chopped
  • 2 free-range mixed-size eggs, beaten
  • 1 orange, zested
  • 250 g self-raising flour
  • 200 g soft light brown sugar
  • 1 tsp mixed spice

For the biscuit butter

  • 4 digestive biscuits
  • 2 tbsp salted butter, softened

Method:

  • Step 1: Pour the tea (300 ml) over the mixed fruit (200 g), golden raisins (75 g), and medjool dates (75 g) in a large bowl. Allow to sit for 3-4 hours or overnight.
  • Step 2: Preheat the oven to 200°C/180°C fan/gas mark 6 and grease and line a 900g loaf tin. Stir the eggs (2), orange zest (1), flour (250 g), sugar (200 g), and mixed spice (1 tsp) into the dried fruit.
  • Step 3: Spoon into the prepared tin, transfer to the oven, and bake for around 1 hour 20 minutes until a skewer inserted comes out clean. Cover with foil if the top looks like it’s browning too quickly. Leave it to cool in the tin for 15 minutes, then transfer it to a wire rack.
  • Step 4: Meanwhile, crush the biscuits (4) in a sandwich bag with the back of a rolling pin until fine, or blitz in a food processor. Beat into the butter (2 tbsp).
  • Step 5: Once cooled, cut the loaf into slices and serve with the biscuit butter and a cup of tea.
