This year, the resort is hosting a series of remarkable dining experiences featuring three world-class Michelin-starred chefs. From February 28 to March 16, guests can enjoy exclusive lunches and brunches at Solaire’s signature restaurants: Yakumi, Waterside, and Finestra.

One of the highlights of this culinary extravaganza is the exceptional dining experience at Waterside, where Chef Sun Kim, the owner of the 2-Michelin Star restaurant Meta in Singapore, presented his unique 6-course tasting menu. Chef Kim’s diverse international experience and cultural roots shine through in his contemporary yet personal fusion of East and West, with a strong Korean influence.

My gastronomy experience at Waterside was nothing short of amazing. The lunch began with a warm welcome and an introduction to the menu, which promised a journey through Chef Kim’s innovative culinary creations. Each dish was a masterpiece, meticulously crafted to showcase the freshest seasonal produce and the finest ingredients.

We began with sashimi of tuna with cuttlefish, seaweed, yuzu, myoga. This was an interesting and delightful dish – the myoga (Japanese ginger) gave a delicate and refreshing spice to the buttery taste of the tuna.

We then were served a) Hokkaido scallop, rice, parsley, aged soy sauce, b) Chawanmushi, spanner crab, seafood broth, chili oil, c) Jeju abalone porridge, lily bulb, kamtae, chicken heart, and d) Miyazaki grilled wagyu beef, celtuce, onion puree, mushroom ragout.

Each dish was unique, but all of them seamlessly blended with one another. I loved how the earthy and roasted flavors from the Hokkaido scallop built up to the rich umami flavor of the chawanmushi. And just when it felt too overwhelming, Chef Kim treated us to a jeju abalone porridge, which is known for its briny, clean taste. It was then beautifully complemented with Miyazaki grilled wagyu beef, which brought just the right amount of smoky flavors.

For dessert, we were served sweet corn, caramel, popcorn, and ice cream. I usually don’t have a sweet tooth, but this dish was heavenly – just the right touch of sweetness and crunchiness to end a truly remarkable (and happy-tummy-inducing) lunch.
