Helmed by Crimson Hotel’s Executive Pastry Chef Nicolas Pasdeloup who’s a graduate of the prestigious École de Paris des Métiers de la Table in France, the patisserie serves up both classic and nouveau French indulgences with a modern twist including house-made bread, celebratory cakes, quiches, carefully-crafted chocolates, and specialty coffee.

Set to be the newest dining destination south of Manila, Baker J also boasts an extensive menu for breakfast, lunch, and dinner. Inspired by the restaurant’s philosophy, the J in its name stands for “Je suis”, which means “I am” in French. The menu reflects the diners’ cravings and moods, like Je Suis Comblé (I Am Satisfied) for the French main dishes, and Je Suis Reveillé (I Am Awake) for the gourmet breakfast selections.

Diners can start the day right with Baker J’s all-day breakfast menu such as Eggs Benedict with sautéed spinach (Eggs Florentine) or with smoked salmon (Smoked Salmon Eggs Benedict); tangy and savory Shakshuka, which is available in a vegetarian-friendly version and a meaty iteration featuring our house-made Spicy Beef & Lamb Sausages; and those pastries like the perfectly crispy and flaky croissant, Petite Madeleine, and the heavenly Kouign-Amann or butter cake from Douarnenez, France.

One of the most popular dishes on the menu is Chef Nicolas’ Coq Au Vin from Burgundy, rich-yet-light Quiche Lorraine; Baker J’s Confit de Canard (duck confit croquettes served with green lentils and mizuna leaves in balsamic vinaigrette), Pan-Seared Salmon Steak with Ratatouille; French breakfast Salmon Tartine; and the brunch-perfect Croque Monsieur with Grùyere.
