Discovery Primea in Manila is reviving its annual Flavors of Colombia event at Flame Restaurant, showcasing sustainable Colombian cuisine. The restaurant, known for its sophisticated ambiance and modern Asian flair, hosts Chef Alex Nessim, a renowned Colombian chef committed to sustainable fishing practices. The event showcases Colombia’s Pacific coast’s rich heritage, expertly crafted by Nessim, who blends tradition with innovation using responsibly sourced ingredients.
On September 26, 2024, Flame presents a dinner-tasting menu curated by Chef Alex Nessim, showcasing the vibrant flavors of Colombia with a contemporary twist. The dinner menu includes:
- Pulpo del Pacífico – Shizugawa octopus confit with annatto oil and sourdough bread
- Tartar de Gambas – Lightly-cooked shrimp with cassava textures and tamarind “aguachile”
- Pescado a la Parrilla – Josper-grilled barramundi with rooftop herb butter
- Pato al Jerez – Pan-roasted duck magret with white chocolate brioche and seared foie grass
- Crema de Café – Colombian coffee crème brûlée

Chef Alex Nessim is a culinary force that advocates sustainable fishing practices, specifically along Colombia’s Pacific coast. A graduate of Le Cordon Bleu in Lima, Peru, Chef Alex trained under culinary masters such as Rafael Osterling and Toshiro. His Cali-based
restaurants, such as Pica Restaurante and Selfish Bar, showcase his fusion of local flavors and modern techniques.
In 2015, Chef Alex founded Pescando Pacifico, a collaborative project promoting eco-friendly fishing practices while preserving the unique culinary heritage of the region.
Before the dinner, Chef Alex will host a merienda at Flame on September 25 to preview his Colombian creations. Culinary enthusiasts and media guests will experience a demonstration of classic Colombian dishes like Patacones con Ceviche and Encocado de.
